It was a “throw stuff together and see what happens” type of day in the kitchen and these delicious Mediterranean fusion bellas came out!  I’ll be honesty, I’m estimating the quantities of things from memory for this recipe, so feel free to tweak the amounts as you see fit.  This came out so well, our non-paleo friend who was staying with us said it’s one of the best meals he’s had!

Fix-it-and-forget-it style cooking rocks when you’ve got a gazillion things to do and little time to do them and can’t be tethered to the kitchen.  Spice the meat, throw it in the slow-cooker and come back hours later to succulent tender beef waiting for your fork.  Serve along with a heaping side of vegetables.

Vegan Friendly Vegetable Soup
There’s nothing in this vegetable soup except vegetables and spices!  It’s meat, gluten, dairy, peanut, and soy free, making it an excellent choice when cooking for someone whose dietary habits/needs you don’t know.  The flavors are simple, coming mostly from the natural flavors of the vegetables in the soup with just a sprinkle of basil, oregano, salt and pepper.  The shredded cabbage replaces pasta and makes the soup more filling while also providing vitamins C and K.  Enjoy!

Chipotle Chicken Tomatillo Soup

I absolutely LOVE soup.  It’s hot, fast, filling, usually full of vegetables and very easy to transport to work in a jar.  The added bonus of eating it at work/school (I’m a grad student/TA) is heating it up in the student lounge and letting the smell of my soup ruthlessly compete with the smells of Lean Cuisine, Hot Pockets, and Progresso soup.  Judging by the comments I get, I’d say my soup is winning.  Jonathan and I also like to eat it along side our OMG Feed Me Taco Salad for a paleo-friendly mexican food dinner.

Caveman Gumbo (AKA Texas Dirty Dishwater)

 Ah, cajun cookin’.  There’s nothing better than a steaming hot bowl of brown goodness, brimming with sea creatures and creole spices.  This recipe is a paleo adaptation that tastes like heaven and will have all your co-workers getting jealous of your superior lunch.  Despite its semi-long ingredients list, the soup doesn’t take terribly long to made and is worth every second spent by the stove.  Don’t have bacon grease?  Well then FRY UP SOME BACON.  You can then crumble it up and save it to toss into a salad/eggs/other recipe later.  Seriously, don’t substitute the bacon grease – it just won’t taste right.
