Paleofied Polish-Style Pork Cutlets (Kotlety Schabowe)

My family is from Kielce, Poland (I’m first generation American), and I grew up eating my grandmother’s amazing cooking from the homeland.  I didn’t always appreciate the food when she was cooking it (awww man, cabbage rolls again?), but now that I’m older and don’t have her calling me when dinner is ready, I miss our simple Polish meals tremendously.
