Jonathan and I probably make this once a week. It takes about 10 minutes total and is ridiculously delicious! If you aren’t eating dairy, then omit the cheese and sour cream. Have this along side Chipotle Chicken Tomatillo Soup for a paleo-friendly mexican dinner!
The OMG Feed Me Taco Salad

Jonathan and I probably make this once a week. It takes about 10 minutes total and is ridiculously delicious! If you aren't eating dairy, then omit the cheese and sour cream. NOTE: I guessed at the measurements for the spices. I usually just sprinkle the spice across the meat until it looks good.
Ingredients
- 1/2 lb ground beef grass fed
- 1 clove garlic chopped/minced
- 1/4 onion diced
- 1/4 tsp chili powder
- 1/4 tsp chipotle powder
- 1/4 tsp cumin
- sea salt to taste
- cracked pepper to taste
- 2 cups favorite salad greens mix a good use for leftovers!
- 2 tbsp sour cream
- 2 tbsp guacamole
- 2 tbsp salsa
- 4 tbsp cheese shredded
Instructions
- Mix ground beef, spices, garlic and onion.
- Throw it all into a pan on medium-high heat and cook, stirring frequently, until the ground beef is brown and cooked.
- Put lettuce in bowls. Top with ground beef and the rest of the ingredients in any order/ratios your heart desires.
- Enjoy!
